The Murai family of Kushigahama in Yamaguchi\nPrefecture (now Shunan City) , which was involved in sake\nproduction, also took part in planning trade and fi sheries on the\nLiaodong Peninsula, but mainly put their eff ort into salt production.\nJapan in the pre-modern era produced large quantities of salt\nthrough a unique method called “channeled salt terraces” (the\nirihama method) mainly on the shores of the Seto Inland Sea. In\nthe latter half of the Tokugawa era, the main production centers\nwere so successful that they even regulated salt production\ncommunally. After the Meiji Restoration, salt manufacturers in Japan\nsought to export salt to Qing China and Korea, a phenomenon that\nindicates the level of confi dence they held in their unique salt\nproduction methods.\nThe traditional method in the pan-Yellow Sea rim of sun-drying\nsalt, however, produced large quantities at far less cost than the\nJapanese channeled salt terrace method. This made it very diffi cult\nfor Japanese salt to enter the market. On the other hand, a\nnumber of Japanese companies and individuals participated in salt\nproduction on the Liaodong Peninsula. The Murai family is a case\nin point.\nThe details of salt production were carried in reports published\nby the South Manchuria Railway Company (Mantetsu) , but very\nfew are still extant, and it is now diffi cult to verify the state of \nJapanese management of salt production in Liaodong.
